1: Prepare the fryer. Heat the fryer to 190 degrees.

2: Shell the oysters

Shell the oysters. Cover the front side of the oyster with a cloth and carefully insert an oyster knife into the hinge on the back side of the oyster. Twist the knife with your wrist to break the hinge. Slide the knife into the top of the oyster shell, and when it is loose enough, pry the shell open. Slide the knife under the oyster meat and remove the oyster legs from the shell.

3: Prepare oysters for frying.

Coat the oysters for frying. Combine flour, salt and black pepper. Lightly beat 2 eggs in a separate bowl. Drain 12 ounces shucked oysters and dip in egg mixture. Dust oysters with dry mix. Remove excess flour.

4: Fry the oysters

Deep fry the oysters. Place 5 or 6 oysters in the pan at a time. Fry for about 2 minutes until golden brown.

5: Serve hot.

2: How to Cook Oysters: Steam oysters on the shell

Step 1: Prepare to steam oysters

Prepare oysters for steaming. Scrub the outside of the shell with a brush under cold running water to remove any dirt. Discard any open or cracked shells, as these are signs that the oyster is dead or damaged.
Do not wash oysters before eating. Washing oysters several hours before steaming can kill them: chemicals like chlorine and poisons like lead can reduce their freshness.

Step 2: Prepare the steaming liquid

Prepare the steaming liquid. Fill a pot with 5.06 cm of water. Add half a glass of beer or wine for taste and aroma. Place a metal steamer or colander in the pot and add the oysters. Place the oysters on the tray or colander. Bring the steaming liquid to a boil and cover the pot.

Step 3 Steam the oysters for about 5 minutes.

Steam the oysters for about 5 minutes. Turn the burner to medium-high heat and steam the oysters for 5 to 10 minutes (5 minutes for medium cooked oysters, 10 minutes for well-done oysters). At this point, most oysters should be open. Discard any oysters that are not open.

Grill is done when the shells open. Discard any oysters whose shells do not open during cooking.

3: How to Cook Oysters: Grill the oysters

Step 1: Prepare the grilled oysters

Prepare the oysters for grilling. Scrub the outside of the shell with a brush under cold running water to remove any dirt. Discard any open or cracked shells. Remove the oysters from the water, draining them quickly.

Step 2: Prepare the grill

Prepare the grill. Use a charcoal or gas grill. Place the grill over medium-high heat. Arrange oysters on grill.

Step 3: Decide whether you want to grill the oysters whole or on the half shell.

There is no difference in the grilling method, but it depends on whether you want to pre-season the oysters or leave them unseasoned until just before you put them in your mouth. If you want to pre-season the oysters, it is best to shuck them. If you want to season them after cooking, or if you do not want to season them at all, it is best to cook them on the shell.
How do I shell oysters? Wrap the top of the oyster in a towel or wear sturdy gloves to protect it. Insert an oyster knife into the hinge (underside) of the oyster. Scrape the top of the oyster shell with the blade and twist to open the strands. Remove the top of the shell and use the knife to loosen the oyster legs from the bottom shell.

Step 4: Prepare seasonings for oysters on the shell.

Oysters are delicious raw or cooked in brine, but sometimes a little seasoning can make oysters shine even brighter. Find ideas that suit your tastes. For inspiration, try the following
Butter and garlic
butter and soy sauce
Butter, shallots, fresh parsley, cheese (pecorino), cayenne, paprika
BBQ sauce

Step 5: Grill the oysters.

Grill oysters. Close the grill lid and leave it on for 5-6 minutes. Open the lid and check the oysters. The points to look at depend on how the oysters will be cooked:
For whole oysters, check to see if the shell is open. At first, you will notice that lines are beginning to form on the shell. Check to see if the oyster brine is bubbling inside that little separation; discard any oyster that does not open after 5 to 10 minutes.
Shelled oysters should be checked before and during shucking to make sure they are safe to eat. Discard oysters that are already open before shucking or that do not offer any resistance while shucking and open immediately. Oysters in the shell will firm up when cooked, and the liquid will bubble up after about 5 to 10 minutes.

Step 6 Carefully remove whole or shelled oysters so as not to let the juices escape.

4: How to Cook Oysters: Traditional Oyster Roast

Step 1: Wash the oysters well.

Wash the oysters well. Wearing gloves to avoid rubbing your hands on the rough shell, wash the sand and dirt from the oysters. Wash the oysters under running water so as not to damage the garden or equipment.
Oysters should also be washed just before grilling. Washing oysters too much before cooking can kill them and make them inedible.
Oysters purchased from suppliers are often washed at the time of harvest, but it does not hurt to wash them once. It pays to be vigilant.

Step 2: Build a fire the same size as the sheet metal.

Build a fire the same size as the sheet metal. For traditional oyster grilling, you will need a fire of adequate size and a large piece of sheet metal. If sheet metal is not available, a metal grate may be used, as long as it is large enough to hold the oysters.
Place four cinders at the edge of the fire and place them in a rectangular shape to easily support the sheet metal when placed on top of the fire.
When the fire has died down, place the sheet metal on the block and wait for it to get hot (of course, the sheet metal should be properly washed beforehand). Pour a few drops of water on the sheet metal, and when you hear a sizzling sound and the water disperses, the surface is ready.

Step 3: Arrange the oysters in a row on the sheet metal.

Arrange the oysters in a row on the sheet metal. Prepare a sufficient quantity of oysters. Aim for 6 to 16 per person.

Step 4: Cover the oysters with a wet burlap sack or wet beach towel and wait for the oysters to cook.

Cover the oysters with a wet burlap sack or beach towel and wait for the oysters to cook. A burlap sack is a little better than a towel (less unsightly when steamed), but a towel is perfectly acceptable.
Allow 8 to 10 minutes for the oysters to cook through. If you prefer not to cook the oysters too much, aim for about 8 minutes. If you want the oysters to cook more, aim for another 2 or 3 minutes under the burlap sack.
Discard any oysters that have not opened 1/4″ to 1/2″ after 10 minutes.

Step 5 Enjoy your first oysters with friends while you wait for the sheet metal to get hot again.
